These energy bites are adapted from a recipe by Ambitious Kitchen. They are delicious and super easy to make! You will need a food processor to make the experience a bit easier, but it can be done without one if you have patience. Caution: eat these sparingly! Ingredients:
Instructions: Add the peanut butter, honey, vanilla, protein powder of your choice, ground flaxseed, oats, cinnamon and chia seeds in the bowl of a food processor. Pulse together until well combined. Add in the chocolate chips and coconut and pulse a few more times. Use a spoon or your hands to grab dough and roll into approx. 10 balls. Then put them in an airtight container for yummy snacking later! Note: You can make these without a food processor, but it just takes more time and you may have to use your hands to mix the ingredients together. You can store these in the fridge for up to 1 week, or the freezer for up to 2 months. Enjoy!
